  2. 1 cup almond milk, unsweetened
  3. 1 cup water
  4. 1/2 cup mixed dried fruit (e.g., raisins, apricots), chopped
  5. 1/4 teaspoon cinnamon

Directions

  1. In a medium saucepan over medium heat, combine quinoa, almond milk, and water, bringing to a boil.
  2. Reduce heat to low, cover, and simmer for 12-15 minutes until quinoa is tender and liquid is absorbed.
  3. Remove from heat, stir in cinnamon and chopped dried fruit, and divide into two bowls.
  4. Serve warm or at room temperature.
