  1. 2 pieces matzo, broken into small pieces
  2. 4 large eggs, beaten
  3. 1/4 cup water
  4. 1 tablespoon olive oil
  5. 1/4 teaspoon salt
  6. 1/4 teaspoon black pepper

Directions

  1. In a medium bowl, soak matzo pieces in water for 1-2 minutes until softened, then drain excess water.
  2. Add beaten eggs to the bowl with matzo, mixing well.
  3. In a medium skillet over medium heat, heat olive oil.
  4. Pour matzo-egg mixture into the skillet, season with salt and pepper, and cook, stirring occasionally, until eggs are fully set, about 5-7 minutes.
  5. Divide into two bowls and serve hot.
