  2. 1 cup zucchini, diced
  3. 1/2 cup bell pepper, diced
  4. 1 tablespoon olive oil
  5. 1/4 teaspoon salt
  6. 1/4 teaspoon black pepper

Directions

  1. In a medium skillet over medium heat, heat olive oil.
  2. Add chicken sausage and cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes (internal temperature 165°F).
  3. Add diced zucchini and bell pepper, season with salt and pepper, and sauté until vegetables are tender, about 7-8 minutes.
  4. Divide into two bowls and serve hot.
