  1. 4 slices turkey bacon, chopped
  2. 1 cup sweet potato, peeled and diced
  3. 1 cup zucchini, diced
  4. 1/2 cup bell pepper, diced
  5. 1 tablespoon olive oil
  6. 1/4 teaspoon salt
  7. 1/4 teaspoon black pepper

Directions

  1. In a large skillet over medium heat, heat olive oil.
  2. Add turkey bacon and cook until crispy, about 5-7 minutes, then remove to a plate.
  3. In the same skillet, add sweet potato, zucchini, and bell pepper, season with salt and pepper, and cook, stirring occasionally, until tender, about 8-10 minutes.
  4. Return bacon to the skillet, stir to combine, and cook for 1 minute more.
  5. Divide into two bowls and serve hot.
