  1. 8 ounces shrimp, peeled and deveined
  2. 1 cup pasta (e.g., rotini)
  3. 1/2 cup cherry tomatoes, halved
  4. 1 tablespoon olive oil
  5. 1 teaspoon lemon juice
  6. 1/4 teaspoon salt
  7. 1/4 teaspoon black pepper

Directions

  1. - In a medium pot, bring water to a boil and cook pasta according to package instructions (about 10-12 minutes), then drain and cool.
  2. - In a medium skillet over medium heat, heat olive oil, add shrimp, salt, and pepper, and cook until pink, about 3-5 minutes (internal temperature 145°F).
  3. - Toss pasta with shrimp, cherry tomatoes, and lemon juice, divide into two bowls, and serve chilled.
