Ingredients
- 8 ounces ground beef
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups spinach, fresh
Directions
- In a large mixing bowl, combine ground beef, salt, and pepper, forming into 2 patties.
- In a medium skillet over medium heat, heat 1/2 tablespoon olive oil, cook patties for 5-7 minutes per side until browned (internal temperature 160°F), then remove to a plate.
- In the same skillet, heat remaining olive oil, add spinach, and sauté until wilted, about 2-3 minutes.
- Divide spinach onto two plates, top each with a beef patty, and serve hot.
Storage
Refrigerate patties and spinach separately in airtight containers for up to 4 days. Reheat in a skillet or microwave.
