Ingredients
- 2 cups canned chickpeas, rinsed and drained
- 3 cups fresh spinach
- 4 cups vegetable broth
- 1 onion , chopped
- 1 tablespoon olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Directions
- In a large pot, heat olive oil over medium heat.
- Add onions and sauté for 3-4 minutes.
- Stir in chickpeas, cumin, salt, and pepper.
- Add vegetable broth and bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in spinach and cook for an additional 3-4 minutes.
