Ingredients
- 4 ounces turkey sausage, ground (sugar-free for Whole30)
- 4 large eggs, beaten
- 1 cup spinach, chopped
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Directions
- In a medium skillet over medium heat, heat olive oil.
- Add turkey sausage and cook, breaking it apart with a spatula, until browned and cooked through, about 8-10 minutes (internal temperature should reach 165°F).
- Push sausage to one side of the skillet, add spinach, and sauté until wilted, about 2 minutes.
- In a small bowl, whisk eggs with salt and pepper, then pour into the skillet.
- Scramble eggs with sausage and spinach over medium heat, stirring occasionally, until fully cooked, about 3-4 minutes.
- Divide into two bowls and serve hot, optionally garnished with fresh herbs.
Storage
Refrigerate in an airtight container for up to 3 days. Reheat in a skillet or microwave.
