Ingredients
- 1 cup sweet potato, peeled and diced
- 4 large eggs
- 1 tablespoon olive oil

Directions
- In a medium skillet over medium heat, heat olive oil.
- Add diced sweet potato and cook, stirring occasionally, until tender and golden, about 10-12 minutes.
- Crack eggs into the skillet over the sweet potatoes, season with salt and pepper, and scramble until fully cooked, about 3-4 minutes.
