Ingredients
- 8 ounces sirloin steak tips (2 pieces, 4 oz each)
- 4 large egg yolks (reserve whites for another use)
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Directions
- In a medium skillet over medium-high heat, heat olive oil.
- Season steak tips with 1/4 teaspoon salt and 1/4 teaspoon pepper, then cook for 3-4 minutes per side until medium-rare (internal temperature 135°F), or longer for desired doneness. Remove to a plate and let rest.
- Reduce heat to low, gently add egg yolks to the skillet, season with remaining salt and pepper, and cook until just warmed through, about 1-2 minutes (do not overcook).
- Slice each steak tip, place one portion on each plate with 2 yolks, and serve hot.
Storage
Refrigerate in an airtight container for up to 3 days. Reheat steak and yolks separately in a skillet or microwave.
