Bacon and Zucchini Fritters

  1. 4 slices bacon (sugar-free for Whole30), chopped
  2. 1 cup zucchini, grated
  3. 2 large eggs, beaten
  4. 1/4 cup almond flour (omit for Whole30, replace with 1 tbsp coconut flour)
  5. 1 tablespoon olive oil
  6. 1/4 teaspoon salt
  7. 1/4 teaspoon black pepper

Directions

  1. In a medium skillet over medium heat, cook chopped bacon until crispy, about 5-7 minutes, then remove to a plate, reserving grease in the skillet.
  2. In a large mixing bowl, combine grated zucchini, beaten eggs, almond flour (or coconut flour), salt, pepper, and cooked bacon, mixing well.
  3. Form mixture into 8 small patties (fritters).
  4. In the same skillet with bacon grease, add olive oil and heat over medium.
  5. Cook fritters in batches, 3-4 minutes per side, until golden brown and cooked through.
  6. Serve 2 fritters per plate warm.
