Ingredients
- 4 slices bacon (sugar-free for Whole30), chopped
- 1 cup zucchini, grated
- 2 large eggs, beaten
- 1/4 cup almond flour (omit for Whole30, replace with 1 tbsp coconut flour)
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Directions
- In a medium skillet over medium heat, cook chopped bacon until crispy, about 5-7 minutes, then remove to a plate, reserving grease in the skillet.
- In a large mixing bowl, combine grated zucchini, beaten eggs, almond flour (or coconut flour), salt, pepper, and cooked bacon, mixing well.
- Form mixture into 8 small patties (fritters).
- In the same skillet with bacon grease, add olive oil and heat over medium.
- Cook fritters in batches, 3-4 minutes per side, until golden brown and cooked through.
- Serve 2 fritters per plate warm.
Storage
Refrigerate in an airtight container for up to 4 days or freeze for up to 1 month. Reheat in a skillet.
